Serves 4


300g your choice of protein (chicken, tofu, or chickpeas)

300g Assorted vegetables (bell peppers, broccoli, carrots)

200ml Coconut milk

200ml/about 10tbs sweet chilli sauce

1 ripe mango (or a tin of mango)

Handful of nuts (cashews are great)

Rapeseed oil for frying (or coconut or sesame if you have it for an Asian flavour)

1 tbs chopped ginger

1 tsp Curry powder (mild, remember the hot flushes can be triggered by hot food)

1tsp paprika (mild)

Brown rice or quinoa to serve




Heat oil in a pan and sauté your protein until cooked through.

Add chopped vegetables and ginger, cook until tender.

Stir in curry powder and paprika, cook for a few minutes to release the flavours.

Pour in coconut milk and sweet chilli sauce, then simmer until the curry thickens.

10 minutes before serving add the mango and nuts.



Serve over brown rice or quinoa, or even a backed sweet potato, and enjoy the flavourful goodness!
