Ingredients
1 sweet potato per person
1 courgette sliced
1 tomato sliced
1 small onion sliced
olive oil
optional rosemary/thyme
Method
With a sharp knife slice the sweet potato in 2-3mm slices ALMOST through to the bottom. You want the potato to still hold together at the bottom.
Into each slice put alternate slices of onion, tomato and courgette.
Put into some foil to hold everything together.
Any over slices just pop into the foil.
Drizzle with olive oil.
Add some rosemary and thyme if you want to be a bit more fancy.
Bake in the oven until the potato is soft.
