Ingredients:
1 lb salmon fillet (Vitamin D, Zinc)
2 cups fresh spinach (Calcium, Magnesium)
1 cup ricotta cheese (Calcium)
1/2 cup grated mozzarella cheese (Calcium)
1/2 cup chopped walnuts (Magnesium, Zinc)
1/4 cup chopped fresh dill
1/4 cup chopped spring onions
1 sheet puff pastry, thawed
1 egg, beaten (for egg wash)
Salt and pepper to taste
Instructions:
Preheat the oven to 400°F (200°C).
In a bowl, mix ricotta cheese, spinach, walnuts, dill, and green onions. Season with salt and pepper.
Roll out the puff pastry on a floured surface. Place half of the pastry on a baking sheet.
Spread the spinach mixture evenly over the pastry, leaving a 1-inch border around the edges.
Place the salmon fillet on top of the spinach mixture. Sprinkle with mozzarella cheese.
Cover with the remaining puff pastry and seal the edges by crimping with a fork.
Brush the top with beaten egg.
Bake for 25-30 minutes, until the pastry is golden brown and crispy.
Let the pie cool slightly before slicing and serving.
