Ingredients
For the flavour
1 leek, sliced OR 1 large red pepper with a handful of olives
1 tablespoon herbs. Your choice of mixed herbs, herbs de Provence, thyme.
(whatever you have in your cupboard).
1 – 2 tablespoons seeds (your choice of pumpkin, sunflower, flaxseed).
75g cheese (whatever you have in the fridge)
For the bread
Salt and pepper to season
200g wholemeal flour
200g self raising flour
100g porridge oats
1 teaspoon bicarbonate of soda
200ml milk
1 tablespoon lemon juice OR cider vinegar
Olive oil
Method
Turn on Oven 200C/180C fan
In a little olive oil fry your veg until softened and leave to cool.
In a bowl add all 3 flours, a teaspoon of salt and the bicarbonate of soda.
Give it a stir
Add the cheese, seeds and cooled veg.
Mix well
Add the milk and vinegar/lemon juice
Use your hands to mix into a dough until all the contents are wet
Put the dough on a baking sheet and pat into a loaf-shape
To help the bread rise cut a deep cross into the dough.
Add some extra oats/seeds to the top if you want to make it a bit more fancy.
Put in the oven for 35 to 40 minutes.
When the loaf is golden and sounds hollow when you tap the base, then it is done.
